Makes: 10 muffins
3 eggs, lightly beaten
100g My Authentic Greek Yogurt 10% by Kri Kri
100ml sunflower or vegetable oil
1 tsp vanilla extract
150g plain flour, sifted
150g light brown soft sugar
1½ tsp baking powder
2 tbsp cocoa powder
100g milk chocolate, chopped into 1cm cubes
100g white chocolate, chopped into 1cm cubes
½ tsp salt
1 Preheat the oven to 180 ̊C, gas mark 4; line a muffin tray with
10 muffin cases. In a medium bowl, combine the eggs, yogurt, oil and vanilla extract. In a separate mixing bowl, combine the flour, sugar, baking powder, cocoa powder, chocolate and salt. Add the yogurt mixture to the dry ingredients and mix together.
2 Spoon the mixture into the muffin cases (to about two thirds full); bake for 25 minutes, or until a skewer inserted into the centre of a muffin comes out clean. Cool in the tin for a few minutes then transfer to a wire rack. Serve while still a little warm, or allow to cool completely.
