Chocolate Meringue Pie

A variation on the Lemon Meringue Pie theme, but one that goes down really well with children. In fact this is cited as my daughter's favourite dessert (and only dessert as she doens't eat any others!)

  • 125g Digestive Biscuits
    2 Tblspoons golden syrup
    25g butter

    1/2 pint Milk
    2 Egg yolks
    50g butter
    50g Flour
    50g Sugar
    1 teaspoon cocoa powder


  1. Crush the digestive biscuits, melt 25g butter, add the syrup and then crushed biscuits. Mix up well, spoon into a dish and spread around to make a consistent base.
  2. Make a white sauce with the butter, milk, flour until relatively thick. Add the cocoa, sugar and 2 egg yolks (keep the whites), leave to cool and pour into the base
  3. Now whisk up the egg whites until they stand up in the bowl, gradually add another 50g of sugar. Add on top of the mixture
  4. Bake for 20 minutes in the over at 150 degrees C
