Chocolate Truffles

My sister and I were tasked with making these after dinner chocolates from a very early age! My parents were always having parties and our treat was to make the chocolates and then lick the bowl...

  • Total time: 30 mins plus overnight wait

Serves: 6


  • 8.5 oz melted plain chocolate (meunier is best, in green pack)
    2 oz butter
    1 rounded tablespoon caster sugar
    1 rounded tablespoon cocoa
    2 egg yolks
    2 tablespoons brandy or rum
    2 tablespoons double cream


  1. Soften the butter, add sugar and beat.
  2. Then add yolks, cream and chocolate. Beat well. Add liqueur and mix again.
  3. Poor mixture into shallow dish in a thin strip (this will make rolling it into balls easier) and allow to harden in fridge overnight.
  4. Roll into balls and dip in cocoa to dust. They can be frozen and then taken out of the freezer before a party!
