    Chocoloate Brownies with Walnuts and Blueberries

    • 110g unsalted butter, plus extra for greasing
    • 75g dark chocolate (containing minimum 70 per cent cocoa solids)
    • 2 large eggs
    • 225g caster sugar
    • 1 teaspoon vanilla extract
    • 75g plain flour, sifted
    • 75g frozen blueberries
    • 75g walnut pieces


    1. Preheat the oven to 180°C/gas mark 4. Butter a 24cm square baking tin and line with baking parchment.
    2. Put the butter and chocolate into a bowl above a saucepan of barely simmering water, making sure the bowl doesn't touch the water. When melted, carefully mix, then remove from the heat.
    3. Whisk the eggs, sugar and vanilla together until thick, pale and frothy. Carefully fold in the chocolate mixture then fold in the flour, reserving 1 tablespoon of it. Coat the frozen blueberries in the tablespoon of flour and add these and the walnuts to the mixture. Fold in. Bake on the middle shelf of the oven for 50 minutes. The brownies will be crisp on top and gooey underneath. Cool completely in the tin and then lift out by the paper and cut into squares.
