    Chorizo and sweet potato stew

    A Really easy Dish to make, incredibly tasty, perfect with large hunks of crusty bread and lots and lots of wine. Great for dinner parties.

    • 3 Large Chorizo (spicy) serves 2 people (Get them from a deli if possible)
      2-3 Sweet Potatoes
      1 Tin of Chopped tomatoes
      1 glass of Red Wine (Ruby cabernet if possible)
      2-3 chicken breasts
      Dried mixed herbs


    1. Chop the Sweet Potato quit thick and coat in olive oil, layer the sweet potato on the bottom of a ceramic baking tray 1 layer thick only. Chop the chorizo thick also (about a mans thumb width** very important**)), arrange the chorizo on top of the sweet potato trying to cover as much as possible. Cover with dried mixed herbs. pour over the glass of red wine and cover the tray with tin foil. put in a preheated over at about 175 0c for 1 hour 20 minutes and then check to see if the chorizo has realeased its wonderfull flavours you should be able to see. after the first stage of cooking now chop the chicken quit thick and arrange over the top, then pour over the tin of tomatoes, give a further 25-30 minutes WITHOUT the tin foil.
