Christines Fish Pie

A delicious family meal or serve at a supper party with friends. As there are only two of us I usually split it into two dishes and freeze one for later!

  • Total time: 1 hour.

Serves: 4

  • 1lb of Cod or Haddock (not smoked)
1 green or red pepper (I sometimes use frozen)roughly chopped
    I medium onion, roughly chopped
    125g strong cheddar (or a bit more!)-grated
    1/2 -3/4 pint milk
    75g butter
    Tablsp corn flour
    seasoning to taste.

Topping of mashed potato and cheese or breadcrumbs and cheese.

If you like prawns - they make a tasty addition.

  1. Cook fish in about half the milk. Meanwhile saute the onions and pepper in the butter. Make a white sauce using the rest of the mik and the liquid from the fish. Add 1/2 the cheese to make a cheese sauce, followed by the pepper and onion and the flaked fish. Put into a pie dish. Top with either the mashed potato and then the grated cheese, or a mixture of breadcrumbs and cheese. Brown in a medium oven.
  2. Nice served with carrots and/or peas.
