    Cider Fondant Potatoes

    Serves: 2 - 3


    • 100g unsalted butter
    • 4 medium desiree potatoes
    • 2 rashers smoked bacon
    • 1 spring thyme
    • 1 spring bay leaf
    • 250ml dry cider


    1. Melt 100g unsalted butter in a pan and stir in 4 medium Desiree potatoes, peeled and halved with two rashers smoked bacon chopped and a sprig each of thyme and a bay leaf.
    2. Pour over 250ml dry cider and place in a preheated oven at 190ºC, gas mark 5 for 50 minutes, basting occasionally until the potatoes are soft and glazed.
