    Cinnamon flavoured layer cake

    Indulgent and decadent sweet

    • Total time: 30mins

    Serves: 6


    • 225g butter
      125g sugar
      225g plain flour
      2tsp ground cinnamon

      50g dark cooking chocolate
      1tbsp rum
      275g double cream
      75g ground almonds
      1tbsp slivered almonds


    1. preheat oven to 200c Pastry-Cream butter and sugar until pale and fluffy.Beat in flour and cinnamon and with hands knead mixture into a smooth dough.Shape into a roll and cut into 6.Roll out each bit between 2 sheets of greaseproof paper into a circle about 8"diameter.Remove top sheet and put them in oven for 6-8 mins or until golden brown.Remove and leave until cold.
    2. In a pan melt chocolate and rum.Remove and spread over one of circles
    3. Mix cream until it forms peaks.Add almonds and beat until stiff.Spread over remaining circles.Assemble layers and refrigerate.
