    Cinnamon Ice Cream


    • 250ml milk
    • 250ml whipping cream
    • 125g sugar
    • 1 cinnamon stick
    • 5 medium eggs


    1. Put the milk, cream, 75g of the sugar and the cinnamon into a pan and bring to the boil. Meanwhile, whisk together the eggs and the remaining 50g sugar. When the milk mixture is boiling, strain it and pour it over the egg and sugar mixture.
    2. Whisk until smooth, then transfer it all to an ice-cream maker and freeze according to the manufacturer's instructions.
