    Cinnamon Parsnips

    • Preparation time: 20 minutes
    • Cooking time: 30 minutes to 40 minutes
    • Total time: 50 minutes to 1 hour 60 minutes

    Serves: 6


    • 1kg parsnips, scrubbed
    • 50g butter
    • 1 tbsp honey
    • ½ tsp ground cinnamon
    • Salt and freshly ground pepper


    1. Preheat the oven to 180°C, gas mark 4.
    2. Cook the parsnips in boiling salted water for 7-10 minutes or until half-cooked, then drain. As soon as you can, peel them and cut into chunky wedges, discarding any tough cores.
    3. Meanwhile, melt the butter with the honey and cinnamon. Put the parsnips in a roasting tin and mix in the butter. Season. Roast in the centre of the oven for 30-40 minutes, turning regularly, until soft and golden.
