    Cinnamon Ricotta with Coriander Honey and Amaretti

    Ingredients

    • 500g ricotta
    • 2 tbsp icing sugar
    • 1 tsp ground cinnamon
    • Coriander honey
    • Pine nuts
    • Ameretti biscuits

    Method

    1. Beat 500g ricotta with 2 tbsp sieved icing sugar and 1 tsp ground cinnamon. Spoon a small mound of the Ricotta on to 6 dishes, drizzle with a little coriander honey, and sprinkle over some pine nuts (preferably lightly toasted); you'll need about 2 tbsp in all. Serve with little amaretti biscuits, accompanied by coffee or a small glass of dessert wine.
