    Classic Brussels Sprouts 2007

    Love them or loathe them, Brussels sprouts are a quintessential part of Christmas lunch. Cook until just tender to keep their nutty taste.

    • 1kg Brussels sprouts
    • Knob of unsalted butter


    1. Bring a pan of water to the boil. Meanwhile, prepare the sprouts by discarding any tough, coarse outer leaves. Using a sharp knife, cut a deep cross into the base of each sprout.
    2. Put the sprouts into the boiling water, cover and boil for 4-5 minutes until just tender. Drain well and add the butter.
