    Classic Greek salad 2010

    A traditional combination of Greek ingredients

    • Preparation time: 20 minutes
    • Total time: 20 minutes 20 minutes

    Serves: Serves 6 as a mezze


    • ½ large cucumber halved lengthways
    • 5 large vine tomatoes, cored and sliced into chunks
    • 1 red onion, finely sliced
    • 150g kalamata olives, stoned
    • 6 tbsp extra virgin olive oil
    • 1½ tbsp red wine vinegar
    • 1 tbsp Cooks’ Ingredients capers, rinsed and drained
    • 300g feta cheese, cubed
    • A large pinch dried oregano
    • 1 tbsp chopped parsley


    1. Scrape the seeds from the cucumber using a teaspoon; discard. Cut the fl esh into large dice.
    2. In a bowl, combine the chopped cucumber with the pepper, tomatoes, onion and olives; dress with half the olive oil and all the vinegar. Season with pepper and a very little salt.
    3. Divide between serving plates and scatter with the capers, feta, oregano and parsley. Drizzle the remaining olive oil over before serving.
