Classic Pasta Sauce

A simple classic base pasta sauce. Use on its own or add diced bacon/ham/chicken/mushrooms/olives. Good for leftovers.

  • Total time: 30 minutes


  • Tin Waitrose Plum Tomatoes
    2 Banana Shallots - small dice
    Stick Celery - small dice
    2 Garlic Cloves - creamed with salt
    Black Pepper - freshly milled
    Nutmeg - grated
    Italian Seasoning - mix basil, oregano, bay leaf - fresh or dried
    Olive Oil - two tablespoons
    Balsamic or good Malt Vinegar - two tablespoons

    Prep time = ten minutes


  1. Add Shallots and Celery to the Olive Oil in a medium saucepn and cook through for five minutes until shallots are translucent.. Add Vinegar and cook out for three minutes.
  2. Add Pepper and Nutmeg and cook for a couple of minutes then add the Tomatoes and cook through for 5 minutes.
  3. Add Garlic and Herbs and simmer gently for another five minutes. Serve on plain boile Spaghetti
