    Coconut and Pineapple Smoothie

    This refreshing smoothie is great for breakfast on warm summer mornings.

    Serves: 2

    Ingredients

    • 200ml coconut milk
    • 200ml chilled pineapple juice
    • 1 frozen banana
    • 150g greek yoghurt
    • Redcurrants

    Method

    1. Pour 200ml coconut milk into a blender. Add 200ml chilled pineapple juice, one frozen banana that's been chopped into ice cube-sized chunks (make sure you peel it before you freeze it) and a 150g pot Greek yogurt.
    2. Blend until you have a smooth drink. Taste and add honey to sweeten if required. Garnish with redcurrants and serve straight away.
