    Coconut Bananas

    Serves: 4


    • 400ml coconut milk
    • Pinch of salt
    • 2 tablespoons dark brown muscovado sugar
    • 4 large bananas, peeled
    • 1-2 tablespoons lemon juice


    1. Place the coconut milk, salt and sugar in a saucepan. Set over a medium/low heat and stir until the sugar has dissolved. Bring to a gentle simmer.
    2. Cut the bananas into large chunks, then add to the simmering coconut milk. Cook gently for 5 minutes, turning the pieces halfway through.
    3. Remove from the heat and add lemon juice to taste. If necessary, adjust the sweetness. Serve warm.
