    Coconut Rice

    Serves: 4


    • 1 onion, finely chopped
    • 2 cloves garlic, chopped
    • 2 tablespoons vegetable oil
    • 175g basmati rice
    • 50g desiccated coconut
    • Large pinch salt


    1. Fry the onion and garlic gently in the oil until soft, then stir in the rice and coconut.
    2. Add the salt and enough water to just cover the rice.
    3. Bring to the boil, cover and turn the heat to a low setting. Cook for 10 minutes, or until the water is absorbed. Take off the heat, leave the lid on and allow to stand for 5 minutes, then serve.
