Cod with spicy tomatoes

Pack of 4 frozen essential Waitrose Breaded Cod Portions
1 tbsp essential Waitrose Vegetable Oil
1 essential Waitrose Onion, chopped
1 x ¼ tsp crushed dried chillies
2 tsp Waitrose Light Brown Muscovado Sugar
2 x 395g cans Waitrose Cherry Tomatoes, drained
1 x 1/3 potted basil
100g pack essential Waitrose Mixed Salad
1. Preheat the oven to 220°C, gas mark 7. Place the cod portions on a baking sheet and bake for 25-30 minutes until golden.
2. Meanwhile, heat the oil in a saucepan and fry the onion for 5 minutes. Add the crushed dried chillies, sugar and the tomatoes. Heat through gently for 5 minutes.
3. Transfer the cod portions to serving plates and spoon the tomatoes on top. Scatter with the remaining basil leaves. Serve with the mixed salad.
