    comfort lasagne

    This is a lasagna dish I devised when I didn't fancy any meat. It is spicy and tasty.

    • Total time: 1 hour including preparation time.

    Serves: 3


    • 2 tbsp oil
      1/2 tsp black mustard seed
      1/2 onion, finely chopped
      1 garlic clove, crushed
      1 tsp dried oregano
      1 tsp celery salt
      1/2 tsp fresh ground black pepper
      1/2 tsp sugar
      1 tbsp worcestershire sauce
      1 tbsp sweet chilli sauce
      small tin chopped tomatoes

      1 tbsp butter
      1 tbsp flour
      300 ml milk
      salt and pepper
      150 g strong cheddar cheese, grated

      1 ball Waitrose mozzarella, sliced
      freshly grated parmesan cheese
      Fattora fresh lasagne
      butter for greasing the dish


    1. Oven on to gas 5. Put the oil in a medium sized pan over low heat. Add the mustard seed. When the seed pops, add the onion and stir and cook until softening. Add the garlic. 1 minute later add the oregano, pepper, celery salt, sugar, the two sauces, then the tomatoes. Stir and bring to the boil. reduce heat and simmer while you make the white sauce.
    2. Melt the butter in a small pan and add the flour. Stir and cook for a minute and gradually add the milk. When the sauce is thick and simmered for a few minutes, season and stir in the grated cheddar.
    3. Butter the inside of a 4x8 inch lasagna dish. Pour in a little of the cheese sauce. Cover with a sheet of lasagne, pour over 2/3 of the tomato mix and cover with a sheet of lasagne. Pour in the rest of the tomato sauce and add the slices of mozzarella and cover with another sheet of lasagne. Pour the rest of the cheese sauce over and sprinkle with the parmesan. Place on a baking tray (in case it bubbles over) and cook in the oven until golden, about 30-40 minutes.
