    Cooked Tomato Sauce


    • Generous sprinklings of oregano
    • 1 small onion
    • 2 sticks celery
    • 1 dessertspoon olive oil
    • 454g tin tomatoes
    • 1 tablespoon garlic
    • 100g tomato purée
    • Juice of 1 lemon
    • 1 dessertspoon sugar, or to taste
    • Generous sprinkling basil
    • Salt and freshly ground black pepper


    1. Whiz up the onion and celery in a food processor, then sweat them with the olive oil in a pan set over a low heat.
    2. Chop the tin of tomatoes in a food processor, and add to the onion and celery mixture.
    3. Add the garlic and tomato purée and season to taste with salt and freshly ground pepper. Once cooked through, add the lemon juice, add sugar to taste and stir in the basil and oregano.
