cornish burgers

vegetarian burgers which have proved a hit with carnivores as well. A bit fiddly, but can be prepared ahead and as well as being a main course can also be pressedinto small biscuit cutter for a delicious bite-size party food item.

Why should your recipe win?
Because,as I said, this appeals to everyone not just veggies, and doesn't taste too "earnest". Breadcrumbs made from ends of the loaf store well in the freezer, nuts can be ground in a food processor ( or bought in a packet from Waitrose!).

  • Total time: 10 minutes prep + 5-10 minutes cooking

Serves: 2


  • 6 oz grated cheese
    6 oz chopped nuts
    6 oz breadcrumbs
    3 oz grated carrot
    1 onion, chopped and fried
    2 beaten eggs
    1/2 teaspoon garam masala (optional)


  1. Mix all this together,form into round cakes about 3/4 inch thick and fry gently in olive oil. Serve with salad or a green vegetable.
