Courgette & spicy houmous pittas

1 courgette, coarsely grated
100g Waitrose Moroccan Houmous
25g pine nuts, toasted
2 wholemeal pittas, toasted
1 little gem lettuce heart, shredded
1. Place the grated courgette in a small bowl, cover with clingfilm and microwave on high for 1 minute. Stir in the houmous and pine nuts.
2. Split open the toasted pittas, and place the shredded lettuce in the bottom. Top with the courgette mixture, and serve with extra salad.
