Courgette pasta

A delicious light lunch or supper dish. It gives emphasis to the delicate taste of courgettes and is a good option when faced with a glut of courgettes. The sauce can be prepared while the pasta is cooking.

This recipe is easy, quick to prepare and provides a taste of summer. With grated cheese it provides ingredients for a healthy meal.

  • Total time: 10 minutes prep + 15 minutes cooking

Serves: 2


  • 2 medium size onions
    2 medium size courgettes
    2 tablespoons of olive oil for cooking
    black pepper
    any kind of pasta - enough for two people
    parmesan as liked on finished dish


  1. Boil the water for pasta and while the pasta is cooking prepare the courgette sauce. Grate the courgettes on a medium sized grater or food mixer attachment. Chop the parsley. Heat olive oil iin frying pan. Cook the onions until soft. Add the grated courgettes and cook for a few minutes until soft. Season with salt and pepper and add finely chopped parsley. Cook for a further minute. Drain the pasta and stir in the courgette mixture. Serve with grated parmesan cheese.
