    Courgette Ribbons with Chives and Sun-Dried Tomatoes

    Serves: 2

    Ingredients

    • 2 large courgettes
    • 1 tsp lemon juice
    • 1 tbsp extra virgin olive oil
    • Sea salt
    • Freshly ground black pepper
    • 2 tbsp chopped chives
    • 8 pieces of marinated, sun dried tomato

    Method

    1. Using a vegetable peeler or mandolin, slice two large courgettes lengthways into 1mm-2mm-thick slices. Put in a bowl and toss with 1 tsp lemon juice, 1 tbsp extra virgin olive oil, sea salt and freshly ground pepper. Mix in 2 tbsp chopped chives and 8 pieces of marinated sun-dried tomato.
    2. Serve this amazingly refreshing salad alongside thick slices of fresh buffalo Mozzarella or pair with hunks of yellowfin tuna fillet (from the Cooks' Ingredients range).
