    Couscous Salad 2

    Serves: 4 as a side dish


    • 200g Couscous
    • Juice of 2 lemons
    • Salt and black pepper
    • 500g tomatoes
    • 200g red onions
    • 5 tablespoons olive oil
    • Small bunch flat-leaf parsley
    • Small bunch coriander
    • Small bunch fresh mint
    • A few basil leaves


    1. Put the couscous in a large bowl. Pour over enough hot water to just cover. Leave for 20-30 minutes, separating the grains from time to time with a fork. When the water is completely absorbed, add the lemon juice, salt and pepper. Mix well.
    2. Deseed the tomatoes and chop finely. Chop the onions finely. Add the tomatoes and onions to the couscous. Mix in with the oil. Finely chop the herbs and add to the couscous. Leave for 2 hours in the fridge before serving, so the flavours can mingle.
