    Couscous Salad 3

    This fresh tasting salad takes only minutes to prepare and makes a colourful addition to a summer buffet table or a family lunch. Do not leave it to stand for too long before serving or the tomatoes and cucumber will soften.

    Serves: 6


    • 225g couscous
    • 4tbsp olive oil
    • Juice of half a lemon
    • 1 bunch organic watercress
    • 1 cucumber
    • 250g organic cherry tomatoes
    • 4 salad onions
    • 2tbsp fresh mint
    • Toasted pine kernels
    • Crusty bread


    1. Cover 225g couscous with boiling water and leave to soak for a few minutes until the water is absorbed. Fluff up with a fork then rub through your fingers to remove any lumps.
    2. When cool, stir in 4tbsp olive oil and the juice of ½ a lemon and season. Wash and dry 1 bunch of organic watercress and chop roughly.
    3. Add to the couscous with a cucumber cut in half lengthways, deseeded and diced. Stir in 250g organic cherry tomatoes, halved, 4 chopped salad onions and 2tbsp chopped fresh mint. Garnish with toasted pine kernels and serve with crusty bread.
