    Cranberry and Apple Sauce

    This is a slight variation on traditional cranberry sauce, made with apples and a hint of cider vinegar. It can be cooked in advance and chilled, then gently reheated before serving. For a richer sauce, replace the water with port.

    • Cooking time: 15 minutes
    • Total time: 25 minutes 25 minutes


    • 175g caster sugar
    • 300g fresh cranberries
    • 2 strips orange zest, pared from the orange with a potato peeler
    • 450g cooking apple, peeled, cored and chopped
    • 1 tbsp cider vinegar


    1. Put all the ingredients into a pan with 4 tbsp water. Stir well and bring to the boil, then reduce the heat to a simmer.
    2. Cook for 15 minutes, or until the cranberries have burst and are soft and pulpy. Remove and discard the orange zest. Serve the sauce warm or cold. If you have any sauce left over, it's delicious in Boxing Day sandwiches with turkey, or Brie and avocado.
