    Cranberry and Autumn Fruit Relish

The bird may be the main attraction, but what gives this feast its distinctive North American flavour are all the other little bits and pieces, such as this delicious relish. It's great on Thanksgiving, of course, but is superb with leftovers, too. For a decadent sandwich, slice a baguette, top with Brie, melt under the grill and spread a fine layer of relish on top.

    Serves: 6

    • 1 orange, finely grated zest and peeled segments
    • 1 eating apple, such as Granny Smith, peeled, cored and chopped
    • 350g fresh cranberries
    • 150g caster sugar
    • 1 tsp ground cinnamon
    • 1 tbsp Grand Marnier

    1. Place all ingredients into a food processor and pulse until finely chopped. Chill, covered, for at least 2 hours to allow flavours to develop. Serve alongside roast turkey.
