    Cranberry and orange cheesecake

    We especially love this creamy Cranberry & orange cheesecake.

    • Preparation time: 20 to 30 minutes, plus four hours chilling
    • Total time: 20 to 30 minutes, plus four hours chilling 30 minutes

    Serves: 6 - 8

    Ingredients

    • 2 x 150g Packs of cranberry & orange cookies
    • 50g, Butter, melted
    • 1 Orange, zest and juice of
    • 25g Caster sugar
    • 100g Dried cranberries
    • 100g Soft low-fat cream cheese
    • 300ml Tub double cream, whipped

    Method

    1. Crush both packs of Cranberry & Orange Cookies, rserving a few crumbs for decorating, and stire in the butter. Press into a 20-22cm springform or loose-bottomed cake tin.
    2. Fold the caster sugar, the zest and juice of the orange, the cranberries into the low fat cream cheese and double cream.
    3. Dollop into the tin and smooth the top. Chill for 4 hours, or overnight, until set. Carefully remove from the tin and sprinkle with the reserved biscuit crumbs to serve
