    Cranberry and Pear Cobbler

    Serves: 4


    • Dough
    • 100g unsalted butter
    • 250g plain flour
    • 1 tsp mixed spice
    • 180ml double cream
    • 4 tbsp caster sugar
    • 250g cranberries
    • 4 pears


    1. Preheat the oven to 200°C, gas mark 6. Mix together a 250g pack cranberries with 4 peeled, cored and roughly chopped pears and 90g caster sugar. Place in a shallow ovenproof dish.
    2. Rub 100g unsalted butter into 250g plain flour until the mixture resembles breadcrumbs. Stir in 1 tsp mixed spice, 2 tbsp caster sugar and 180ml double cream with a fork. Shape the dough into small patties and place on top of the fruit. Sprinkle over 1 tbsp caster sugar and bake for 40 minutes, until golden. Serve warm with cream or custard.
