    Creamed Fresh Horseradish

    Serves: 6 - 8

    Ingredients

    • 100g fresh horseradish root
    • 2 tsp good vinegar, such as sherry
    • 1 good tsp English mustard
    • 125ml crème fraîche
    • Salt
    • Freshly ground black pepper

    Method

    1. Peel and finely grate the horseradish. Mix with the vinegar and mustard and leave to macerate for 10 minutes. Mix again. Stir in the crème fraîche and season to taste.
