    Creamy Swiss Muesli

My girls love muesli, especially when served with fresh fruit. This is a luxurious version, soaked overnight to make it deliciously moist and rich. I like to add extra raisins, but you could also add other chopped dried fruits such as apricots, peaches, mangoes or pears. It is best to buy Swiss-style muesli which contains raw oats and bran rather than the toasted crunchy cereals. If liked, add fresh fruit such as sliced strawberries, raspberries and bananas.

    Serves: 4

    • 6 heaped tbsp Swiss-style muesli
    • 2 tbsp raisins
    • 142ml pot Waitrose Single Cream
    • 150ml milk
    • 150ml Waitrose English Pressed Apple Juice
    • 1 sweet eating apple

    1. Place the muesli in a large bowl, add the raisins. Stir in four tablespoons of cream, the milk and apple juice. Leave to soak for at least 30 minutes or overnight in the fridge.
    2. Peel and coarsely grate the apple and stir into the muesli just before serving. Serve drizzled with the remaining cream and top with fresh fruit if liked.
