    Crispy Herring with Mustard Cream

    Serves: 4

    Ingredients

    • 2 tbsp seasoned flour
    • 4 Waitrose herring cutlets
    • 2 tbsp vegetable oil
    • 2 rounded tbsp crème fraîche
    • 2 tsp wholegrain mustard
    • 2 tbsp chopped parsley
    • 1 squeeze of lemon juice

    Method

    1. Spread 2 tbsp of seasoned flour on a plate. Coat 4 Waitrose herring cutlets in the flour. Heat 2 tbsp vegetable oil in a large frying pan, add the herring and fry on both sides for 6-8 minutes, until crisp and golden. Drain on kitchen paper.
    2. Warm 2 rounded tbsp crème fraîche with 2 tsp wholegrain mustard, 2 tbsp chopped parsley and a squeeze of lemon juice and serve with the crispy herring and a lemon wedge.
