    Crispy Mustard Pork

    • Total time: Ready in 40 minutes 40 minutes

    Serves: 2 generously

    Ingredients

    • 454g British pork fillet
    • 2 tbsp Waitrose Cooks' Ingredients Dijon Wholegrain Mustard
    • 25g Waitrose Cooks' Ingredients Breadcrumbs
    • 2 tbsp chopped fresh flat-leaf parsley
    • Olive oil
    • Cherry tomatoes on the vine

    Method

    1. Preheat the oven to 180°C, gas mark 4.
    2. Rub 454g British pork fillet with 2 tbsp Waitrose Cooks' Ingredients Dijon Wholegrain Mustard. Then coat the fillet all over with a mixture of 25g Waitrose Cooks' Ingredients Breadcrumbs and 2 tbsp chopped fresh flat-leaf parsley.
    3. Place on a baking tray, drizzle with olive oil and bake in the preheated oven for 20 minutes.
    4. Add some cherry tomatoes on the vine to the baking tray and return to the oven for a further 15 minutes, or until the pork is thoroughly cooked and the juices run clear.
    5. Remove from the oven and allow to rest before slicing into rounds and serving with the tomatoes and buttered new or Jersey Royal potatoes.
