    Crispy Spiced Mackerel with Lemon

    • Preparation time: 10 minutes, plus marinating
    • Cooking time: 6 minutes
    • Total time: 16 minutes 20 minutes

    Serves: 4

    Ingredients

    • 8 small mackerel fillets
    • 2 tbsp sunflower oil
    • 2 tbsp lemon juice
    • 2 tbsp natural yogurt
    • 2 tsp finely diced ginger
    • 2 tsp cayenne pepper
    • 2 tsp ground cumin
    • 2 tsp garam masala
    • Salt and freshly ground black pepper

    Method

    1. Gently rinse the mackerel under cold water and pat dry on kitchen paper. Cut three diagonal slashes into the skin of each fillet.
    2. Mix all the marinade ingredients, except the salt, in a wide bowl, large enough to hold all the fish. Add the mackerel fillets and gently rub the marinade all over them. Cover and chill for 30 minutes.
    3. Preheat two griddle pans over a medium heat (or cook the fish in batches). Alternatively, fire up the barbecue. Remove the fish from the marinade. Using your fingers, lightly oil the fillets with the sunflower oil. Salt lightly then cook the fish, flesh-side down, for 3 minutes before flipping over and cooking for a further 3 minutes.

    Serve warm with fresh lemon, watercress and crusty, buttered bread.
