    Crushed Potatoes with Chives

    Serves: 12


    • 1.5kg King Edward potatoes, peeled and quartered
    • Salt
    • Freshly ground black pepper
    • 5-6 tbsp olive oil
    • 1 pack of fresh chives


    1. Bring the potatoes to the boil in salted water and simmer over a moderate heat for 20 minutes or until cooked through. Drain.
    2. Return the potatoes to the pan, add the olive oil and crush coarsely with a fork. Adjust the seasoning. Snip in most of the chives, reserving a few longer pieces to garnish. Serve hot.

    Cook's tips

    If cooking the potatoes in advance, heat half the olive oil in a pan, add the cooked potatoes and crush gently. Set aside to cool. When required, add the rest of the oil and heat through over a moderate heat. Adjust seasoning, snip in chives as before and serve.
