    Cucumber Moroccan Salad

    Serves: 4


    • 750g cucumber
    • Salt
    • Juice of 1 orange
    • Juice of ½ a lemon
    • 2 dessertspoons orange flower water
    • 2 dessertspoons caster sugar
    • ½ teaspoon ground cinnamon


    1. Peel the cucumbers and finely grate the flesh. Place in a colander, sprinkle generously with salt and leave to drain for 10 minutes. Squeeze out excess liquid with your hands.
    2. Mix together the orange and lemon juices, the orange flower water and the sugar, and pour over the grated cucumber. Sprinkle over the cinnamon and chill thoroughly before serving.
