    Cucumber Rounds with Feta, Tomato, Kalamata Olives and Mint

    Ingredients

    • 1 slim cucumber
    • 12 Mint leaves
    • 4 Cherry tomatoes
    • 12 Feta Cheese lumps
    • 12 Pitted Kalamata Olives
    • Salt and freshly ground black pepper

    Method

    1. Slice a slim cucumber into 1cm-thick rounds. Top each with a large mint leaf, followed by 1/4 of a cherry tomato, a small nugget of Feta cheese and a pitted Kalamata olive, to make a bite-sized Greek salad.
    2. Sprinkle with salt and freshly ground black pepper and serve. One small cucumber yields about 12 slices.
