    Cucumber Squares with Smoked Trout, Wasabi Crème Fraîche and Onuga

    • Preparation time: 10 minutes, plus standing
    • Total time: 10 minutes, plus standing 10 minutes

    Makes: 24

    Ingredients

    • 1 large cucumber
    • 2 tbsp rice vinegar
    • 1 tsp caster sugar
    • 75ml crème fraîche
    • Grated zest of 2 limes
    • 2 tsp wasabi paste
    • 125g pack smoked trout, flaked
    • 4 tbsp Onuga mock caviar and/or keta or salmon caviar

    Method

    1. Cut the cucumber into 1cm-thick slices, then trim each slice to make a square. Place in a large, shallow dish with the rice vinegar and sugar. Mix well and set aside for 30 minutes.
    2. Mix the crème fraîche, lime zest and wasabi in a small bowl. Place a few flakes of smoked trout on each cucumber square, add a dollop of the crème fraîche and wasabi mixture and a touch of Onuga and serve.
