Curried Sausages

Curried Sausages are quite a popular comfort food in Australia and this is my recipe that I have tweaked over the years.

  • Total time: 35 minutes

Serves: 4

  • 6 pork or beef sausages
1½ cups water (may need more)
    1-2tbsp tomato ketchup
    1tsp curry powder
    Dash of pepper
    ½ cup peas
    340g tin sweet corn
    ½ cup chopped carrot
    125g sultanas
    1 cup diced potatoes
    1¼ cup rice (to serve)
Corn flour and water to thicken (optional)

  1. Boil sausages until cooked - about 10 minutes - then peel the sausages and cut into quarters.
  2. Add to a large pot, sausages, tomato sauce, curry powder, pepper, water, sultanas and the vegetables.
  3. Leave to simmer until thickens - if there is not enough water you may need to add some more.
  4. Meanwhile, cook the rice in your preferred way. Once the potato is cooked take the pot off the heat and serve on bed of rice.
