    Date and Walnut Cake 2010

    • Preparation time: 10 minutes
    • Cooking time: 1 hour to 1 hour 15 minutes

    Serves: 8


    • 500 g Dates, stoned
    • 50 g unsalted butter, softened
    • 500 g self-raising flour
    • ½ tsp salt
    • 1 tsp ground cinnamon
    • ½ tsp ground cloves
    • 175 g walnut pieces
    • 50 g golden caster sugar
    • 2 eggs


    1. Preheat the oven to 180c, gas 4. Butter and line a 1.5kg loaf tin with baking parchment.
    2. Roughly chop the dates, place in a bowl, pour over 450ml of boiling water and leave to soak for 5 minutes. Meanwhile, sift the flour into a bowl with the salt and spices and toss in the walnuts. Beat the butter with the sugar till pale and fluffy. Crack in 1 egg and continue to beat until smooth. Fold in 1 tbsp dry ingredients, then beat in the second egg. Fold in the rest of the dry ingredients, along with the dates and their water.
    3. Tip the mixture into the tin; smooth into the corners. Bake for 1 hour to 1 hour 15 minutes until well-risen and firm to the finger (if it is darkening too quickly, you may need to reduce the temperature a little and cover the top with foil near the end of the cooking time).
