    Date Chutney

    This chutney takes only minutes to prepare and keeps for weeks in the fridge. It is great served with all manner of dishes, from spicy casseroles to sandwiches.

    Makes: about 300g


    • 175ml cider vinegar
    • 1 tsp fresh root ginger, finely chopped
    • 1 shallot, finely chopped
    • 50g raisins
    • Pinch allspice
    • Pinch cinnamon
    • 250g pack Medjool dates, pitted and coarsely chopped
    • 8 tbsp Waitrose No. 1 Medium Maple Syrup


    1. Place the vinegar, ginger, shallot, raisins and spices in a medium pan and bring to the boil. Reduce the heat and simmer for 5 minutes.
    2. Add the dates and maple syrup and stir well. Cook for 5-6 minutes, stirring occasionally, until the dates have softened and a sweet/sour syrup has formed around them. Remove and allow to cool before serving. If refrigerating, bring back to room temperature before serving, as the chutney solidifies when cold.

    Notes on ingredients

    Replace the maple syrup with half the quantity of Waitrose Romanian Coriander Honey. Vary the flavours of this chutney by using other dried fruits, such as figs or apricots.
