    Deep South Coffee Cake

    Recipe from The Good Food Shop bakery, Salisbury.

    Ingredients

    • Topping
    • 3 teaspoons instant coffee, dissolved in 1 tablespoon hot water
    • 250g icing sugar
    • 2 teaspoons cocoa powder
    • 250g margarine
    • 250g granulated sugar
    • 3 medium eggs
    • 3 teaspoons instant coffee, dissolved in 1 tablespoon hot water
    • 2 tablespoons Southern Comfort (or, 1 miniature)
    • 250g flour
    • 15g baking powder

    Method

    1. Mix the margarine, sugar and eggs well in a bowl. Add the coffee and Southern Comfort and whisk to blend.
    2. Combine the flour and baking powder, then fold into the margarine mixture.
    3. Pour into a lined, greased 20cm cake tin and bake in an oven preheated to 180°C/gas mark 4 for 20 minutes, or until firm. Turn onto a cooling rack and remove the baking paper while the cake is still warm.
    4. Make the topping by blending all the ingredients together. When the cake is cold, ice with the topping and leave until set before serving.
