    DIY Pasta Salad

    This dish is easy and very portable and everyone can add the ingredients they like. For best results, use dried instead of fresh pasta, as it is less likely to stick together.

    • Preparation time: 5 minutes
    • Cooking time: 15 minutes, plus 3 minutes cooling time
    • Total time: 23 minutes 25 minutes

    Serves: 4

    Ingredients

    • 350g Waitrose Amori Pasta
    • 3 tbsp extra virgin olive oil
    • Extra ingredients of your choice (see step 3)
    • Salt and freshly ground black pepper

    Method

    1. Cook the pasta according to the pack instructions. Drain, then place under cold running water for about 3 minutes until cool. Drain well.
    2. Transfer to a shallow bowl or plastic container. Drizzle with olive oil, season, then stir gently before covering.
    3. Add your choice of ingredients from the following list:
      • 170g jar Waitrose Red Pesto Stir In Sauce, from the chiller cabinets, or Waitrose Italian Red Pesto Sauce
      • 125g tub mini mozzarellas, cut into halves
      • Slices of prosciutto, torn into pieces
      • 1 avocado pear, diced
      • Merchant Gourmet Luxury Mi-Cuit Tomatoes, diced
      • Cherry vine tomatoes
      • Blanched asparagus
      • 125g cooked and shelled broad beans
      • 1 pack fresh basil
      • Parmigiano-Reggiano shavings

    Cook's tips

    Prepare the pasta the night before and chill in the fridge until you are ready to use it. Prepare the other ingredients up to 2 hours before the picnic, then transport them in ziplock bags.
