    Double Decker Croissants

    Savoury croissant sandwiches that will go down a treat with children and adults alike.

    • Preparation time: 30 minutes
    • Cooking time: 2 hours refrigeration
    • Total time: 2 hours 30 minutes 60 minutes 60 minutes 30 minutes

    Serves: 4


    • Mini croissants
    • 1 ripe avocado
    • Salt
    • Freshly ground black pepper
    • 1tsp lemon juice
    • 2 tomatoes, washed, dried and sliced
    • 4 slices ham
    • 8 slices cheese
    • 1 punnet mustard and cress, snipped from the pot with scissors


    1. Adults should supervise the first stage. Using a sharp bread knife, carefully slice the croissants horizontally into three layers, without cutting right through.
    2. Cut the avocado lengthways around the stone. Twist the two halves apart and then remove the stone - it should flick out easily with the end of a teaspoon. Using a spoon, scoop the avocado flesh out of the skin in big chunks, then slice the pieces and lay on a plate. Sprinkle with salt, pepper and the lemon juice to prevent discolouration.
    3. Now put together the sandwiches, dividing the ingredients between the eight croissants.
    4. Wrap each Double Decker tightly in greaseproof paper, then place them together on a large plate. Cover with another plate and put a weight, such as a can of baked beans - on top. This will squash the layers together and makes for easy, tidy eating. Refrigerate for 2 hours.
