    Dreamy Apricot Trifle

    Whip up a creamy, delicious dessert in next to no time with a jar of boozy fruits, fresh custard and thick double cream.

    • Preparation time: 15 minutes plus leave to chill and firm up for at least 1 hour
    • Total time: 1 hour 15 minutes 60 minutes 15 minutes

    Serves: 8


    • 1 box Waitrose Trifle Sponges
    • 2 x 465g jars Garden of England Apricots in Drambuie
    • 500g tub Waitrose Fresh Custard
    • 284ml double cream
    • 2tbsp icing sugar
    • 3tbsp toasted flaked almonds


    1. Cut each of the trifle sponges in half horizontally and place in the base of a large glass bowl.
    2. Drain the Drambuie from the apricots and pour the liquid from one jar over the sponge base. Leave to soak in. Chop the apricots roughly and scatter over the sponge base. Pour the custard over the apricots.
    3. Whip the cream with the icing sugar until thick and then spoon on top of the custard. Cover with clingfilm and place in the fridge. Leave to chill and firm up for at least 1 hour. Serve scattered with toasted almonds.

    Cook's tips

    Use any sweet cake such as panettone, Madeira cake or brioche, for the base of the trifle instead instead of the trifle sponge.
