    Dressed Cornish Crab

    Marco Pierre White’s quickly assembled lunch recipe

    Serves: 6


    • 300g white Cornish crab meat
    • 100g brown Cornish crab meat
    • 40g fresh bread, brown or white, made into breadcrumbs
    • 1 tbsp brandy
    • 2 small seeded baguettes
    • 100g mayonnaise
    • 3 lemons, halved
    • 10g pea tops


    1. Preheat the oven to 180C, gas mark 4. Put the white crab meat onto 6 plates.
    2. In a bowl, mix the brown meat with the fresh breadcrumbs. Add the brandy, taste, then season. Spoon the brown meat next to the white crab meat.
    3. Cut each baguette into fi ne slices, lengthways. Put the slices on a baking tray and cook in the oven for about 10 minutes, until crisp and golden.
    4. Place a few slices of warm toast on each plate with a small ramekin of mayonnaise and a half lemon. Dress each plate with a few pea tops and serve immediately.
