    Duck, Blackberry and Onion Sausages with Rich Mushroom Sauce

    Mushrooms cooked in a creamy lemon-sherry sauce and served with duck, blackberry and onion sausages make a luxury supper dish.

    Serves: 4

    Ingredients

    • 8 Waitrose Duck, Blackberry and Onion Sausages
    • 40g butter
    • 1tbsp olive oil
    • 280g mushrooms, sliced
    • 2tsp lemon juice
    • 2tbsp dry sherry
    • 4tbsp double cream
    • salt and pepper
    • 1tbsp flat-leaf parsley, chopped

    Method

    1. Place the sausages under a preheated grill for 10-15 minutes, turning occasionally until thoroughly cooked.
    2. Heat the butter and oil together in a pan, add the mushrooms and cook for 2-3 minutes. Add the lemon juice and sherry. Cook for a further minute and stir in the cream. Season.
    3. Add the parsley, stir and serve with the sausages and baby new potatoes.
