Easy Moroccan meatballs

2 tbsp essential Waitrose Vegetable Oil
1 essential Waitrose Red Onion, finely chopped
432g pack 12 essential Waitrose Lamb Meatballs
2 tsp Bart Ras el Hanout seasoning
400g can essential Waitrose Chopped Tomatoes
400g can essential Waitrose Chick Peas, rinsed and drained
75g Waitrose LOVE Life Soft Apricots, roughly chopped (optional)
250g essential Waitrose Couscous
1. Heat the oil in a large pan, add the onion and fry until it begins to soften. Add the meatballs and fry until sealed on all sides. Add the Ras el Hanout and fry for a further minute.
2. Stir in the tomatoes, chick peas and dried apricots, and mix together well. Cover pan and simmer gently for 30 minutes.
3. Cook the couscous according to the pack. Serve with the meatballs.
