    Easy chicken & cannellini crush

    Serves: 2


    2 essential Waitrose British Chicken Breasts
    75g fresh wholemeal breadcrumbs
    1½ tbsp sun-dried tomato paste
    25g essential Waitrose Pitted Black Olives, sliced
    25g pack basil, chopped
    400g essential Waitrose Cannellini Beans, drained and rinsed
    1 tbsp basil-infused olive oil


    1. Preheat the oven to 200°C, gas mark 6.
    Place the chicken in a roasting dish.

    2. Mix the breadcrumbs, tomato paste, 1-2 tbsp water, olives and half the basil. Press onto the chicken and bake for 20-25 minutes. Ensure the chicken is cooked through with no pink meat.

    3. Roughly crush the beans with the remaining basil and oil and heat in the microwave on full power for 2 minutes. Season and serve with the chicken.
